The meaning of parsley, sage, rosemary and thyme
Parsley
It was believed to take away the bitterness, and medieval doctors took this in a spiritual sense as well.
Sage
Sage has been known to symbolize strength and constancy.
Rosemary
Rosemary represents faithfulness and remembrance. Rosemary grows slowly but is very hardy and enduring, although slow growing and is associated with feminine love.
Thyme
Thyme symbolizes courage and knights used to wear embroidered images of thyme in their shields when they went to war.
